Halkidiki green olives are qualified by the large size of the fruit, shinny yellow-green color, fine fruity aroma, a slightly bitter and spicy taste and without the sense of greasiness.
Kalamon olives have a chocolate dark brown color. They are usually tight and crispy with a discreet fruity taste coupled with a salty, slightly bitter and vinegar taste. They can be consumed as an appetizer (mezes), in salads, especially Greek salad, and are also used in many recipes.
